We were having a yummy soup lunch and eating in the great outdoors - in November... yes our weather really behaved nicely for us. The last time I made homemade garlic bread it was a tad overdressed. I liked the look of this recipe because it was simple and mostly just herbs. I had run out of basil (huh??!) so I used Italian Seasoning instead. The only green thing in our garden is our parsley and oh man is it green. It's flourishing in giant bushes! I'm weird and made my own French bread for this recipe, now that I'm a bread snob... anyway... I used something I've only ever accidentally turned on, my broiler! After baking for a bit in the oven, I flipped on the broiler and wow did it crisp up the top and make that garlic sing. This bread was a big hit in our house, ok out on our deck, but we'll certainly be making it again.
Garlic Bread
1 (14 oz) loaf French bread
1/2 cup salted butter, softened
1 Tbsp minced fresh garlic
1 Tbsp finely chopped fresh parsley, or 1 tsp dried (optional)
1 Tbsp finely chopped fresh basil, or 1/2 tsp dried (optional)
1 Tbsp finely chopped fresh oregano, or 1/2 tsp dried (optional)
1/2 tsp freshly ground black pepper
1 tsp salt
Instructions
Preheat oven to 350 degrees. Cut french bread loaf in half horizontally.
In a small mixing bowl stir together butter, garlic, parsley, basil, oregano and pepper. Brush mixture evenly over top of both bread halves.
Place bread on baking sheet and bake in center of preheated oven for 8 minutes.
Move oven rack closer to broiler. Let bread broil about 45 seconds to 3 minutes until golden brown. Keep an eye on it, it can brown quickly.
Cut into slices and serve warm.
