Don't compost pumpkins... just don't

Early on when we plant our garden each year I have doubts. Doubts that this is the year it's not going to go well. This year I made a huge mistake and composted our 150+ pumpkins with seeds... and had a million+ baby pumpkin plants growing under our landscaping cloth in the garden. We'd go out there and the whole cloth was lifted a few inches by baby pumpkin plants we'd have to stomp down. This is one of the first years our cucumbers have produced LOTS of cucumbers. I'm so thankful for my kids who love to go outside and pick from the garden. They come in with beans, zucchini, and cucumbers. Soon we'll be swimming in tomatoes. But right now, cucumbers. ALL the cucumbers. They are even growing between the chicken wire and chain link fencing - those needed some help getting picked. All these cucumbers and what to do? Cucumber Salad says Andy! Ok! I often make a creamy one but it get so watery and meh... not so sure about it. I mean it tastes good - but it doesn't age well. We took 7 cucumbers and made this salad. 7 cucumbers... less than 24 hours ago... he's almost finished it. I'd say it's good. Good thing, we have another 8 cucumbers ready to do something with and heaven knows how many in the garden.

Cucumber & Onion Salad

2 cucumbers thinly sliced
½ white onion thinly sliced
⅓ cup white wine vinegar
3 Tablespoons water
1 Tablespoon vegetable oil or olive oil
3 teaspoons sugar
¼ teaspoon kosher salt
⅛ teaspoon pepper

Instructions
Wash cucumbers and pat dry. Slice cucumber and onion, then place in a large bowl.
Stir together remaining ingredients in a small bowl.
Pour dressing over cucumber and onions and mix until coated.
Refrigerate for at least 1 hour before serving.
