Ribs are not something I great up eating - but they are something Andy did. In his day I heard he could eat an entire rack by himself. We happened to be family grocety shopping - because I had shingles and they all felt bad for me - but I didn't feel like rewritting the list to be super specific. I held up a rack and he said "oh we'll need two" - um... ok!
So two racks we did! We've done an Alton Brown recipe here and there but I wanted to try something different. I found this recipe and it did not disappoint - fall off the bone they did! Did he eat an entire rack? All of us together didn't even eat an entire rack, but they were delicious. They also made the house smell amazing. I used Sweet Baby Rays on top but no extra honey, figured we were sweet enough. I even used my broiler without setting anything on fire - which feels like an accomplishment. Andy was very clear on the no parsley please... so... no parsley... He has been eating these on repeat for left overs and they must be good - because he keeps going back for them. Yay for delicious food!
Fall Off The Bone Ribs
Ingredients
1 rack baby back ribs membrane removed
Dry Rub:
2 Tbs paprika
1 Tbs black pepper
3 Tbs brown sugar
2 tsp coarse salt
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
1 tsp chili powder
1/2 tsp dry mustard
BBQ Sauce:
1/2 cup brown sugar bbq sauce
2-3 Tbs honey
Parsley
Preheat oven to 300.
Lay your ribs on a large sheet of heavy duty aluminum foil.
Mix together your dry rub ingredients and rub onto both sides of your ribs and wrap up tightly and place on large baking sheet.
Bake in oven for 3 hours.
Remove from oven and unwrap.
Mix together your bbq sauce and honey and brush on ribs.
Place back in oven on lowest rack and broil for about 3-5 minutes, remove from oven and brush with more bbq sauce.
Sprinkle with parsley if desired.
