Sweet Little Fuzzy Round Things

Our peach tree was prolific this year. SO many peaches we were blessed with - it was wonderful. I had my eye on this recipe our entire peach season and just didn't get around to it. Thankfully we froze a bunch of peach slices for baking and other fun so I grabbed some to make this recipe. These muffins are wonderful. Filled with spices and yummy peaches. I left a few without glaze for my girl who isn't a fan. The rest of us - big fans. Here's hoping for more peaches next year so we can keep trying new things and give more away. We gave away so many peaches this year - it was amazing. Some people thought we should be giving more away... clearly those people didn't actually see how many we did give out. It was a LOT. Buckets to friends, buckets to Iowa, buckets to Wisconsin, crates to friends, the kids rode all over town with bags of peaches for people, so many peaches - millions of peaches you might say.... So much fun to bring smiles to so many with sweet little fuzzy things. Here's to another year of fuzz.

Peach Muffins
Ingredients
Muffins
2 ⅔ cups (333 g) all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon baking soda
2 teaspoons cinnamon
1 teaspoon kosher salt
¼ cup (½ stick / 57 g) unsalted butter, room temperature
⅓ cup (73 g) vegetable oil
½ cup (100 g) granulated sugar
⅓ cup (67 g) light brown sugar, packed
2 large eggs, room temperature
1 teaspoon vanilla extract
1 cup (245 g) buttermilk, room temperature
Peaches
4 medium yellow peaches, pitted, finely diced
4 teaspoons granulated sugar
1 tablespoon cinnamon
1 teaspoon nutmeg
Glaze
1 cup (125 g) confectioners' sugar
2-3 tablespoons whole milk, room temperature
Instructions
Preheat oven to 425°F and line a muffin pan with liners.
In a medium bowl, combine the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
In a large bowl, mix together the butter, oil, and sugars until smooth.
Add eggs, vanilla, and buttermilk.
To the wet ingredients, add the flour mixture. Mix until just combined. Set aside.
In a small bowl, mix together peaches, granulated sugar, and cinnamon.
Gently fold the spiced peaches into muffin batter.
Divide the batter evenly between the 12 muffin cups. Bake for 22-24 minutes, or until an inserted toothpick comes out with a few crumbs, but no wet batter. As the muffins are baking, make the glaze.
In a medium mixing bowl, combine confectioners' sugar and milk. Whisk until light and smooth. Add more milk, if needed, to reach your desired consistency.
Drizzle the glaze over the warm muffins.
