Does it every slow down? It doesn't seem like it...

It's been a crazy couple of weeks with the end of summer and the start of the new school year. It seems like every week is slam packed with multiple things every day. Each week we say - maybe next week won't be so crazy, but it is.. it always is. I planned to make this recipe on yet another busy night - then decided after I was trying to figure out how to make it easier, I better pick one that wasn't. Thankfully I read some of the reviews and I was able to not suffer the fate of many others who had dried out gross pork chops, no one wants that. I also added more spices and seasoning to the sauce to make sure the potatoes tasted even better. I cooked the potatoes for an hour first, then removed the foil and added seasoned pork chops to the top. 25 minutes got them to temp. Sure the potatoes could have used a touch more time but they were hot and pretty delicious. My family agreed this was a "do again" recipe. Andy liked that he didn't have to get the grill going after his crazy day of work then chasing around as well. I think you could meal prep this by doing the potatoes ahead... It would take even longer in the oven but I bet it could work. Whatever the method - with these tweaks... great dinner on a beautiful almost fall like day.

Pork Chops with Scalloped Potatoes
Ingredients
3 tablespoons butter
3 tablespoons all-purpose flour
1-1/2 teaspoons season salt
1/4 teaspoon pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1 can (14-1/2 ounces) chicken broth
6 pork rib or loin chops (3/4 inch thick)
2 tablespoons canola oil
Additional salt and pepper, optional
6 cups thinly sliced peeled potatoes
1 medium onion, sliced
Paprika and minced fresh parsley, optional

Directions
In a small saucepan, melt butter; stir in the flour, salt and pepper until smooth. Add broth. Bring to a boil; cook and stir for 1 minute or until thickened. Remove from the heat and set aside.
In a large skillet, brown the pork chops on both sides in oil; sprinkle with additional salt and pepper if desired.
In a greased 13x9-in. baking dish, layer potatoes and onion. Pour broth mixture over layers.
Cover and bake at 350° for 1 hour; uncover and place pork chops on top bake 30 minutes longer or until meat and potatoes are tender. If desired, sprinkle with paprika and parsley.
