We are well aware that Bronwyn is heading towards the land of braces. She's already had an expander but we are waiting on three more stubborn teeth to make their way out. Meanwhile we were having a conversation about braces and how she wouldn't be able to eat popcorn when she has them. I said she could eat corn puffs! She had no idea what those were so when we were at the store I showed her - airy puffed corn... no old maids, not sharp edges, just puffy corny goodness. I was telling her I used to make a caramel corn with it - so we bought 3 bags and headed home to make it! This was a sticky crazy huge mess - but so worth it. I used the biggest bowl I had to stir it up - still wasn't big enough... but made it work. Laid it out in two giant baking pans and the stirring every 15 minutes, a comedy of hot hot hot! But great success! The boys LOVE the caramel corn and Bronwyn was won over by it as well. She decided maybe she wouldn't miss popcorn when it's finally time to get those braces on... eventually... when those teeth come out... maybe... never.
Caramel Corn
2 (8oz) Corn Puffs
2 sticks butter
2 cups brown sugar
½ cup light corn syrup
1 tsp vanilla
½ tsp baking soda
Grease roasting pan and pour puffs into pan. In deep sauce pan, combine butter, brown sugar, corn syrup, and vanilla. Bring to a boil for 2 minutes, stirring constantly. Remove from heat and stir in baking soda (mixture will foam). Pour onto puffs and stir until puffs and well coated.
Bake at 250 degrees for 1 hour, stirring every 15 minutes. Cool on wax paper.
