Meal Planning and Meal Prep are my love language

This is my mom's lasagna recipe - I've eaten it my whole life. Well... Most of it anyway. I had previously posted this but again - thanks google for losing my pictures. I got married, didn't become a different person... Anyway.. this lasagna...
One of my favorite parts is you can make it ahead and toss it in the freezer. You don't even cook the noodles. I made this a few weeks ago knowing we were going to have a crazy night and I needed to feed 6 of us. Thankfully my folks came to watch the kids while Andy and I did parent teacher conferences. The bonus of a frozen block of lasagna is that you can put it in the oven at 5 AM and set the timer to start at 2:45... then it spends ALL day thawing, then the oven magically bakes it to perfection! Well... it was a little less warm in the middle but we had to get going to the next thing we had that night. Always something. Remember when life wasn't so crazy busy? oh how I miss those days. But this recipe stands the test of time. We have been getting Italian sausage from CostCo - so that's what I used here - but Sweet Turkey Sausage is yummy too. Tweak what you need to - add what you want - the base is great.

Turkey Lasagna
What you need!
3 cups Mozzarella Cheese
Group #1
1 lb ground sweet turkey sausage
1 lrg onion
3 14 oz can diced tomatoes
2 6 oz.tomato paste
1 cup water
1 tbls sugar
2 tbls parsley
1 tbls basil
Group #2
2 2/3 cups cottage cheese
4 oz Parmesan cheese
1 tbls parsley
1 tsp oregano

Make it!
Brown and Simmer Group #1. Mix Group #2. In a 9 x 13 pan layer #1, Lasagna Noodles, #2, Lasagna Noodles #1, Lasagna Noodles, #2, Lasagna Noodles #1. Top with Mozzarella Cheese. Bake covered at 350 for 1 hour. Uncovered for the last 15 min. Set 10 - 15 min before serving.
