Snack? We need snack? Apparently if you are getting together for church, food is a must. We had a membership class... and snacks were requested. I volunteered…. Well, because no one else did and I like to bake. (is this really baking?)
Last New Year’s Eve my friend Marcia brought this amazing Chex Mix to the party. We all munched on it all night long, then we all requested the recipe! SO good and easy! The only weird ingredient is baking soda… but for some reason it must work and have a purpose. Maybe I’ll have Andy do some research. He’s usually all about that.
Chex School Fuel
What you need!
4 cups Corn Chex cereal (or generic brand)
4 cups Rice Chex cereal (or generic brand)
¾ cup packed brown sugar
6 tablespoons butter or margarine
3 tablespoons light corn syrup
¼ teaspoon baking soda
¼ cup semisweet chocolate chips
Make it!
Into large bowl, measure cereal; set aside. Line cookie sheet with waxed paper.
In a large pot, melt brown sugar, butter and corn syrup until melted and smooth. Stir in baking soda until dissolved. Pour in cereal, stirring until evenly coated. Cooking for 3 – 5 minutes Spread on cookie sheet. Cool 10 minutes. Break into bite-size pieces.
In small microwavable bowl, microwave chocolate chips uncovered on High about 1 minute 30 seconds or until chips can be stirred smooth (bowl will be hot). Drizzle over snack. Refrigerate until set. Store in tightly covered container.
