So let’s say you just had gallbladder surgery (as in getting it removed) and had a week of sitting around being bored, but not being able to do much? Sure makes me want to bake or do something. So bake I did... finally felt well enough to bake. I had a taste for these cookies, but had no white chips. Thankfully my mom, the keeper of all things baking had a bag of white chips. Mmmm... Pearls N’ Chocolate, and I’m not even a fan of white chocolate. But these sure are good.
Pearls 'N Chocolate Cookies
What you need!
2 1/4 cups flour
2/3 cup cocoa
1 tsp Baking Soda
1/2 tsp Salt
1 cup softened butter
3/4 cup sugar
2/3 cup firmly packed brown sugar
1 tsp vanilla
2 eggs
1 package white chocolate chips
What to do!
Preheat oven to 350. In a small bowl, combine flour, cocoa, baking soda and salt; set aside. In a large mixer bowl beat butter, sugar, brown sugar and vanilla until creamy. Add eggs, one at a time, beating well after each addition. Gradually add flour mixture. Stir in white chocolate chips. Drop by rounded measuring tablespoonfuls onto ungreased cookie sheets. Bake 9 - 10 min until edges are lightly browned. Let stand 2 min before removing from cookie sheets; cool completely.
Makes about 30 3-inch cookies
