Mmmm Corn Fritters

So I know you all are sitting with a freezer full of Derksen Corn... just like us. Derksen Corn? You know... the awesome sweet corn we did last fall? Ahh, let me remind you:

Now you know what I’m talking about. So all that corn in your freezer… not sure what to do about it? Corn Fritters. While you can use fresh corn, the frozen goodness from last summer works just as well.

Corn Fritters
What you need!
3 cups drained Derksen Corn – or 4 ears sweet corn, cooked
2 eggs, beaten
½ cup milk
½ cup all purpose flour
1 tsp baking powder
1 tsp sugar
½ tsp salt
1 Tbsp vegetable oil
Optional: butter and maple syrup

What to do!
Drain thawed corn and put in medium mixing bowl stir in eggs and milk. Combine flour, baking powder, sugar and salt in a small bowl; stir in corn mixture, and mix gently.
Heat vegetable oil in a skillet or electric griddle over medium-high heat. Drop batter by ¼ cupfuls and cook until delicately browned, turning to brown the other side. Serve with butter and maple syrup.
