So let’s talk about tater tots. In my opinion they the perfect packet of potato. They are all minced up pillows of potato, they get crunchy on the outside when you bake them but stay tender and potatoey on the inside. Just add some other good items with them – only makes them that much better.

I showed Andy pictures of this recipe online and instantly said we must make it. Anything with the cast iron skillet is his domain. He loves his skillet! He did all the cooking and was quite proud of himself… as he should be!
Next time I think we’ll add some diced up ham… that would make this dish even better!
TaterTot Skillet of Awesome
What you need!
2 tablespoons vegetable oil
2 cups tater tots
1 chopped green pepper
1 chopped onion
1 cup chopped mushrooms
4 eggs, beaten
1 cup shredded cheddar cheese
Make it!
Bake tater tots in oven as directed by package.
Heat cast iron skillet with veggie oil. Toss in onions, peppers and mushrooms. Cook until slightly soft.
Toss in tatertots, pour in eggs, top with cheese.
Throw in oven (still on from tater tots) for 15 minutes.
Carefully remove and enjoy!
