The cake Christmas can't wait for...
Last Christmas I made this amazing Ice Cream Cake. Long after Christmas I downloaded the photos and I realized who would want this fantastic peppermint ice cream cake for…. January? Everyone is on diets – it would be a sad reminder of all things yummy.
So now that ya’ll are back to indulgence – here’s that awesome recipe.
This is a conglomeration of my favorite ice cream cake recipes – with awesome peppermint ice cream. We took huge slices – but not the clean plates – well received. Who wouldn’t love Oreos, peppermint ice cream, hot fudge and Cool Whip? It's like the best ice cream sundae in a slice.
Christmas Ice Cream Cake
What you need!
35 Oreo cookies
1/2 cup melted butter/margarine
1/2 gallon Peppermint Ice Cream
1 bottle chocolate Fudge Topping
1 tub (8 oz.) Whipped Topping, thawed, divided
1 pkg. (3.9 oz.) Chocolate Instant Pudding
Make it!
Crush 25 Oreo cookies and mix with melted margarine. Spread on bottom of circular spring form pan. Pat down to make crust. Put in freezer for 20 min. Take out ice cream to soften slightly. Spread half of ice cream over cookie crust and freeze. Pour ½ cup of fudge topping into medium bowl. Whisk in 1 cup whipped topping. Add dry pudding mix; stir 2 min. Stir in 5 chopped cookies. Cover with remaining ice cream. Pour fudge over ice cream and freeze several hours. Spread cool whip over fudge and sprinkle remaining (crushed) cookies on top. Freeze until ready to serve.

How would I get it into a 9x13 pan? Double it?
