My brother Mike is a health nut. Wait… no, no he is not… But he does like his chocolate cake with oatmeal in it. He turned 35 in February. 35 old man!
For many years this was his requested birthday cake. Even when he was in college in Milwaukee, my mom would make a full cake in a disposable pan and we’d get it to him for his birthday. It seems odd to me to add oatmeal to the cake, but it just seems to make it more dense and moist. This cake also has Chocolate Cream Cheese Frosting - that makes it even better.
Make it for someone you love who is or is not a health nut. Just remember – it has extra fiber.
Chocolate Oatmeal Cake
What you need!
1 3/4 cups boiling water
1 cup oatmeal
1 cup brown sugar
1 cup sugar
1 stick butter
1 egg
1 3/4 cups flour
1 tsp Baking Soda
1/2 tsp Salt
1 tbls cocoa
2 cups Chocolate Chips
Chocolate Cream Cheese Frosting:
What you need!
1 box powdered sugar
1/2 stick butter
1 8 oz pkg. cream cheese
5 heaping tsp. cocoa
Make it!
Pour boiling water over oatmeal and let stand 10 min. Add brown and white sugar and butter. Stir till butter melts. Add eggs. Mix well. Sift flour, soda, and salt. Add Cocoa. Add 1 cup chocolate chips. Add nuts. Pour into sprayed 9 x 13" pan. Pour rest of chips on top. Bake at 350 for 30 - 40 min. Cover with frosting. Mix well.
