Picnic Food – Not "We Need Appetizer Food"

Sometimes you want the taste of bruschetta but don’t feel like making or buying bread.  Then there’s that whole soggy toast thing that happens sometimes.  And when you pile too much on?  You have to use a fork anyway!  Why not just add that bruschetta to pasta and make an awesome pasta salad.  That’s just what I did.  I had all the ingredients but no ambition for the bread part.  Plus we were having brats and hot dogs – that is picnic food – not fancy - we need appetizer food.
If you want to serve this as bruschetta – go for it… skip the pasta and pile it on toasted bread, but I’d suggest the pasta salad for a refreshing summer dish.
 
Fresh Bruschetta Pasta Salad
What you need!
16 oz box of pasta – cooked and drained
5 small roma tomatoes – diced
1 onion diced
6 cloves of garlic minced
½ cup finely chopped basil
½ cup red wine vinegar
3 tbsp olive oil
1 tsp kosher salt
½ tsp black pepper
 
Make it!
Cook pasta according to package directions.  Add all ingredients together and let sit for several hours before serving.  Stir and serve.
