Toothsome Rice Needs Home - No Long Welcome on Cedar Road

The only rice I successfully make is minute rice and sometimes that isn't successful.  This Savory Rice Mix is a recipe my mom did for our canning exchange last year.  I decided to mix up a batch since I have made this twice and both times the rice was correctly cooked.  Andy usually calls my rice toothsome.  In other words, underdone.  This recipe makes about 4 one cup recipes.  We use our homemade chicken stock and it's really tasty.

Savory Rice Mix
4 cups long-cooking rice, uncooked
¼ cup dried minced onion
1 envelope from a 2 oz. pkg. onion soup mix
1 TBLS dried parsley
¼ tsp. garlic salt
¼ tsp. salt
Combine all ingredients; store in an airtight container for up to 4 months. Makes 4 cups.
Instructions: Mix one cup mix with 2 cups beef broth in a 2 quart saucepan; add one TBLS butter.
Bring to a rolling boil; reduce heat. Simmer, covered (don’t peek), until liquid is absorbed, about 20-25 minutes.

Makes 4 servings.
