Three kinds of corn - way better than just one!

Why is it that we only make things like Green Bean Casserole and Corn Casserole at the holidays?  They are delicious!  We should enjoy them more often.  We enjoyed Corn Casserole, soo yummy.  This is one of my mom's great recipes, three kinds of corn, some margarine and sour cream - bakes into puffy rich corn bread awesomeness.  Don't wait for a holiday - just make this and enjoy it!

Corn Casserole
1/2 cup margarine, melted
1 cup sour cream
1 egg, beaten
1 16 oz can whole kernel corn, drained
1 16 oz can creamed corn
1 small box Jiffy corn muffin mix
Preheat oven to 350 degrees.  Mix first ingredients. Stir in corn. Add muffin mix. Put in well-greased 2 qt casserole. Bake for 1 hour. It should be fluffy and top golden brown and crisp.
