Love is.... pork chops and stuffing.

Valentine's Day isn't really my holiday. I know some women who expect huge grand gestures, flowers, chocolates, fancy dinners, jewelry, the whole thing. I'm thrilled with Aldi flowers and a 99 cent card. This year we focused more on our kids. I found a Pinterest idea several years ago that showed taping hearts on your kids' doors each night and writing one thing you love about them on it. We did this and Bronwyn LOVED it. Nicholas? He liked that his door got filled with hearts. Bronwyn enjoyed reading his hearts as much as her own. What a fun way to give them a visible sign that we love them. Some nights it was not easy - fussy kids meant struggling to find an aspect that I love about them when all my mind was thinking about was the fit they had.
We had a candlelit dinner - OK, candles in addition to the light overhead. For the meal we had this French Onion Skillet - it's a favorite of ours. Anytime we can have pork chops and applesauce - my kids are all about. But this one has onions and stuffing too. SO good! We had strawberries and ice cream too, a very special treat as we don't usually have dessert. And yes... we are mean parents - no dessert! Ok, we do sometimes - but our kids are in love with fruit - so often they will ask for a banana or an apple after dinner.
Don't wait for a holiday for this yummy meal. It's kid approved too - just so you know - at least my kids.

French Onion-Pork Chop Skillet
6 boneless pork chops (1-1/2 lb.), 1/2 inch thick
2 onions, thinly sliced
2 Tbsp. Worcestershire Sauce
1 pkg. (6 oz.) Stuffing Mix for Chicken
1-1/2 cups hot water
1 cup Shredded Low-Moisture Part-Skim Mozzarella Cheese
Cook chops and onions in large nonstick skillet on medium-high heat 8 min., turning chops and stirring onions after 4 min. (Chops will not be done.) Remove chops from skillet.
Cook onions additional 5 min. or until golden brown, stirring frequently. Stir in Worcestershire sauce. Return chops to skillet; spoon onion mixture over chops.
Combine stuffing mix and hot water; spoon around edge of skillet. Top chops and stuffing with cheese; cover. Cook 5 min. or until cheese is melted and chops are done (145°F). Remove skillet from heat. Let stand 3 min. before serving.
