Unicorn Poop, Awful vs. Awesome, and Laughing that Hurts

Imagine a world where unicorns poop rainbows... or Bernards poop rainbows - why? Because he ate an entire pound bag of Skittles while we were at work. HOW did he get this bag down off the middle of the counter? I wish I knew. I'm ready to line up mouse traps along the edge of my counters to keep him off of them during the day. He's a ninja - I swear. So I came home from work to a kitchen in disaster on a day that I needed that the least, I had dinner to make in the short 35 minutes I was home, then later 3 batches of buttercream to make, color, and bag up in 20 piping bags for GEMS that night. So walking into a disaster of shredded everything, scattered Skittles that he had missed, I was less than pleased. I sent him outside to go poop the rainbow. UGH.
On the dinner menu, I had enchiladas. I'd made pork enchiladas once before and I wasn't super excited about them, but Andy liked them. My cousin made us enchiladas when I had my neck surgery and we all liked them, so when I saw a recipe for "Easy Weeknight Enchiladas" I was all "I like easy weeknight meals!" So I baked up some chicken the night before and was ready to roll!
I mixed the sauce together with the sour cream and happened to taste a little sauce that dripped. Oh.my.word. What was that? That acrid taste? Well... maybe it's like molasses and needs to be baked and it'll taste better. I finished rolling up the tortillas with chicken and cheese, added the rest of the sauce, chopped the veg for on top, tossed it into the oven and ran out the door to get the kids from school.
Came home and the smell was... interesting. Andy was loving it. We sat down to dinner and he scooped up a huge portion for me, which I quickly traded with him. As I watched my kids eat and make faces, I had to hide my face in my napkin or my shirt to hide the laughing. My poor kids, they felt the same way I did. Nicholas wanted to know "what is this?" Bronwyn also was very confused about what we were eating. Andy? In his glory - couldn't eat them fast enough.
"Are these supposed to taste like this?" I asked.
"Yes - they are great thank you!"
"Why would people eat these?" Bronwyn asked. Oh, my aching body. You see... I slipped on the ice at work the day before and felt that fall in every odd muscle I have in my body and laughing hurt so bad... but laugh I did.
"These are awesome!" Andy said
"You used the wrong a word - I'd go with awful" I replied.
So let's say that enchiladas aren't going to be making our weekly menu. I like the idea - but I think I'll make two pans and the kids and I can have some with less... red stuff on them.

Weeknight Chicken Enchiladas
1 pound can Mild Red Enchilada Sauce
3/4 cup sour cream
14 taco size white corn tortillas (we used flour)
3 cups shredded cooked rotisserie chicken
2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
1 cup sliced green onion
3/4 cup sliced mild red peppers
1 cup chopped fresh cilantro leaves

Preheat oven to 350 degrees F. and have 9x13-inch baking dish ready to use.
Place enchilada sauce and sour cream into a medium mixing bowl. Whisk until well combined.
Place 1 cup enchilada sauce mixture into bottom of baking dish, spreading evenly.
Warm half of the tortillas in microwave for 1 minute, until hot. Start layering each tortilla with a couple tablespoons of shredded chicken and shredded cheese. Carefully roll tortilla over filling tightly and transfer to baking dish placing seam side down.
Continue to fill tortillas until pan is filled. Remember to warm second half of tortillas before filling.
Pour 2 cups of enchilada sauce mixture over enchiladas, spreading evenly. Top with green onion, red peppers and cilantro leaves. Bake for 30 minutes, or until hot. Remove and serve warm.

    Did you ever figure out what caused that acrid taste in the sauce? Looking at the ingredient list it doesn't seem like anything odious. Did something go bad, or spoil, maybe?
