Tacos in yet another form...

For as long as I can remember, my mom has been making Taco Soup - a crockpot recipe that makes crowds happy. One of the nice parts of this recipe is you can doctor it up the way you like it. Like it spicy? Kick it up. Like sour cream? Add some to your bowl. Want some crunch? Toss a bunch of Fritos in there. How about some cheesy goodness? Dump it on in. We made it with ground turkey, but you can use ground beef too - that's usually what my mom uses. We also didn't add Kidney Beans. Maybe you like Kidney Beans, and Andy likes Kidney Beans, I am not a fan... and honestly, they aren't something I'm going to fight with my kids to eat. So... beanless it was, and it was delicious! Perfect for a cold day, a warm cozy bowl of soup!

Taco Soup
1 pound ground beef (or turkey)
1/2 cup hcoppedchopped onion
28 oz can whole tomatoes with juice (or diced tomatoes)
14 oz can kidney beans with juice
14 oz can of corn with juice
8 oz can tomato sauce
1 pkg. dry taco seasoning
1 - 2 cups water
Salt to taste
Pepper to taste
1 cup grated cheddar cheese
Fritos

Brown meat and onions in skillet - drain. Combine all ingredients except cheese and chips in slow cooker. Cover, cook on low 4-6 hours. Ladle into bowls. Top with cheese and serve with chips.
