Remember when there were no meetings?

Remember back in the summer of 2020 - the heart of COVID when we didn’t go anywhere? Plans were canceled? I miss having less to do.
Our nights are filled with meetings and endless things to get done. Sometimes you just need a crockpot meal to get you through another night of meal making.
Nicholas recently informed me he doesn’t like my standard crockpot porkchops. Well Ok buddy… this one is for you! I tried a new recipe and he told me how delicious they were! They even include potatoes- Andy likes potatoes. These were delicious with … apple sauce of course, but also very easy to make the night before for an easy meal.

Crockpot Ranch Pork Chops and Potatoes
3 Lbs Red Potatoes - quartered
6 (3/4 inch) Boneless Pork Chops (or bone-in if available)
1/2 Cup Olive Oil
2 Tablespoons Dry Ranch Seasoning
2 teaspoons Apple Cider Vinegar
2 Tablespoons Butter - cubed

Sear pork chops in oiled skillet over medium/high heat. (optional)
Mix oil, ranch and apple cider vinegar.
Place potatoes and pork chops into slow cooker. Pour ranch mixture over the top and toss to coat potatoes and chops evenly.
Top with butter cubes.
Cooking on high heat for approximately 3 hours. On low, 5-6 hours. Salt/Pepper to taste.
