A Room for Sprinkles

“More sprinkles?  We’ll need to move the baby out to house all your sprinkles.”  Ok Andy – it’s not really THAT bad… sometimes he thinks so when I come home from the Wilton Tent Sale will lots of sprinkles.  But who wouldn’t?  They have bottles and bottles of them and they are cheap!
This recipe used up two of my bottles of sprinkles. Now I have to wait a whole year to replenish!  Or… go to Michaels and get another bottle. (Shhhh don’t tell Andy!)   I used a yellow cake mix, but I think it could be awesome with a chocolate cake mix and chocolate jimmies inside.  I just may have to try them.
These are an easy cookie when you need a quick treat or need to bring a dish somewhere.  Just remember… a cup of sprinkles are a LOT… so be prepared with plenty on hand.  If you need to move someone out of a room – go for it… might be worth it. 
(For the record, Bronwyn doesn’t even sleep in her own room yet… so she doesn’t even know what she’s missing!)

Sprinkle Cookies

What you need!
1 box yellow cake mix
1 tsp baking powder
2 eggs
1/2 C vegetable oil
1/2 tsp vanilla extract
1 cup sprinkles

Make it!
Preheat oven to 350 degrees. In a large bowl, mix together the cake mix and baking powder. In a small bowl, mix together the eggs, oil and vanilla. Add the egg mixture to the cake mixture and stir to combine. Stir in the sprinkles. Drop by spoonfuls onto a cookie sheet or silpat.
Bake for 10 minutes. Allow to cool for 5 minutes on the baking sheet before transferring to cooling rack. The cookies will be very soft at first. Cool and enjoy!
Try these will different cake mixes and different sprinkles for some variety.
