Clean Out the Fridge Pasta Salad

Sometimes you just want a pasta salad that has everything in it.  Have a little cucumber?  Throw it in.  Oh some tomatoes?  In they go.  Mmm salami – in you go too!  This pasta salad was pretty easy to put together – I just kept dumping more and more into it.  I also used my favorite salad dressing – the one for our easy green salad.  It’s always a winner – so why not Pasta?

Salami Pasta Salad
What you need!
2 cups uncooked small pasta shells
3/4 cup chopped green pepper
3/4 cup chopped celery
3/4 cup chopped cucumber 
3/4 cup chopped fresh tomatoes
1/2 cup cubed hard salami
1 cup shredded mozzarella
1/2 cup chopped red onion
1 handful chopped fresh basil
Dressing: 1/3 cup vegetable oil
2 tablespoons plus 1-1/2 teaspoons red wine vinegar
1-1/2 teaspoons sugar
1/2 teaspoon Italian seasoning
1/2 teaspoon lemon juice
1 garlic clove, minced
Salt and pepper to taste
Make it!
Cook pasta according to package directions; drain and rinse in cold water. Place in a large bowl; add the veggies together.
In a small bowl, whisk the dressing ingredients. Pour over pasta mixture; toss to coat. Cover and refrigerate until serving.
