When you rock a low carb, low sugar, high protein lifestyle... you don't get pancakes too often.  I miss pancakes.  I've tried the magical egg + banana = magical pancake method... it was less than magical, more impossible to flip, tasted like scrambled egg and warm banana slime... Nope!  Hard pass.  I'm not that hard up.
 Recently I saw another version of this that added a quarter cup of high protein pancake mix. Ohhhhh, that seemed like a game-changer of sorts.  They looked like pancakes, they smelled like pancakes, they were far more pancake-like than my previous attempt.  Sure they have a banana flavor, but I thought they were good and you get quite a few of them per serving.  Even my cereal eating kids were looking over my shoulder wondering if they could sneak a bite.  Sorry kids, Mama is hungry!!  Sometimes making a lighter version of a dish is worth it, like here.  Sometimes not - like light cinnamon rolls?  That's crazy and why?  Go for the gusto! A healthier way to eat pancakes?  I'll take that!
Banana Cloud Pancakes 
Take one ripe banana and sprinkle with a little salt. Mash with a fork until it becomes a pudding-like consistency.
Crack one egg in and add 1/4 cup of Kodiak Cakes protein pancakes mix. Whisk together then add just shy of 1/4 cup water (you can do the full amount but they are perfect if you do like 1/5 cup 😂). Mix until well combined.
Spray a pan with cooking oil of choice over medium heat and place 1/4 cup batter. Cook and flip like you would Pancakes!
This recipe makes 6 pancakes
