Sprinkles and food coloring make things better

"Why are you coloring the frosting?"
"Why not?"
"Because you already have sprinkles in the cookies."
"So, this will make it look even better!"
"No, no it won't"
My kids disagreed with him, I disagreed with him - clear he - aka Andy - was wrong! Let it be written, let it be so!
I was making "adult" whoopie pies and felt the need to make some kid ones too. These funfetti cookies are so good alone - but pipe some buttercream inside? Even better. Want to make it over the top? Color your buttercream and mix up the colors and pipe it in! Yum.
These cookies are sweet. SO sweet - but they are good. They were certainly a hit with kids and adults alike.
Just remember - sprinkles and food coloring make things better!

Cake Mix Whoopie Pies
1 box White Cake Mix
1 container Whipped White Frosting
1 lg Egg
1 stick Stick Butter, softened
food coloring
Rainbow Nonpareils or Sprinkles

Instructions
Preheat oven to 350 degrees.
Combine the cake mix, egg, and butter in a medium bowl. Beat together until well mixed.
With a spoon, gently stir in the sprinkles, adding as many as you would like.
Roll into about 1-inch balls and place on a cookie sheet. Lightly press the cookies down about halfway with the bottom of a cup, and bake for 8-10 minutes.
Remove from oven and cool completely.
Divide the frosting and mix in 3 or 4 colors of your choice. Place each color of frosting into a plastic baggie, and snip the corner off to use for piping.
Pipe a round mound of frosting on the bottom of one cookie and gently press another cookie on top of it. Repeat this until all the cookies are frosted and topped with another cookie.
This recipe will make approximately 10 whoopie pies.

Vanilla Buttercream Frosting
1/2 cups butter, at room temperature (3 sticks)
1 1/2 cups powdered sugar
1 Tbsp heavy cream
1 tsp vanilla extract

In the bowl of an electric stand mixer, using the paddle or whisk attachment whip butter on medium-high speed (if using whisk attachment whip on high speed) until nearly white and very fluffy, about 7 - 8 minutes, frequently scraping down the sides of the bowl.
Add in powdered sugar, heavy cream, and vanilla extract and mix on low speed until blended, then increase speed to medium and beat until very light and fluffy, about 5 - 6 minutes, frequently scraping down the sides of the bowl.
